200g Pearl barley
1 Tbsp Extra virgin olive oil
Salt and pepper
2 Tbsp Balsamic vinegar
Chopped flat leaf parsley
Put the pearl barley in a saucepan and cover with water, bring to the boil and simmer. Check at 25 minutes, the pearl barley should be soft but with a little bite to it. Simmer for a few more minutes if necessary.
Drain and dress with the olive oil, salt, pepper and cool to room temperature.
Add the parsley, pomegranate and balsamic vinegar Just before serving.
You can personalise this salad to your own taste by adding alternative herbs, spices and vinegars. Maybe add spinach, tomatoes, cooked mushrooms, squash or chopped apple as a few examples. Experiment and have fun with this delicious salad.
