Irish Potato Cakes

Serves 4


3 cups of room temperature of boiled mashed potatoes
1/2 cup of plain flour
1 small Egg (beaten)
Handful of chopped chives
1 teaspoon of celery salt
2 tablespoons of melted butter
Plus 2 tablespoons of butter for frying


Add the ingredients to a bowl and mix well. Tip onto a floured surface and roll out to 1cm in thickness. Cut out the cakes with a metal pastry cutter. Then add the 2 tablespoons of butter to a frying pan, when melted, fry the cakes until golden brown, keep then warm in the oven until you are ready to serve.

Serving suggestions

Serve with smoked salmon and poached eggs, for a little more indulgence, add hollandaise sauce.

Alternatively serve with bacon and oven roasted tomatoes.
