White Christmas Soup

Serves 6

Following the hugely successful Festive FEAST at the start of December, we have been asked (repeatedly) for the recipe to the White Christmas Soup we served. So to help your Christmas dinner go that extra mile and add a little something special, here is the FIRST of our FEAST recipe blogs…

Ingredients

2 tbsp oil

2 chopped onions

2 medium potatoes (diced)

700ml of vegetable stock

1 tbsp fresh or dried thyme

150g Stilton Cheese (diced)

2 tbsp flour

150ml milk

3 tbsp Marsala or sweet sherry

salt and pepper

Method

Heat the oil in a frying pan and fry the onion on a low heat for 10-15 minutes until soft.

Add the potato, thyme and stock to the pan and bring to the boil. Cover and simmer for approximately 15 minutes until the potato is tender.

Remove from the heat and stir in the Stilton until melted, then blend the soup until completely smooth.

Mix the flour with a little water to form a paste. Add to the soup along with the Marsala or sherry and milk.

Reheat gently, taste and season with the salt and pepper.
