Pumpkin Soup. We thought it would be perfect to add a delicious Soup recipe for you all to try. This is the latest of the recipes we publish for you to try.

This Pumpkin Soup is packed full of flavour and offers you a seasonal warming soup
Serves 4 hungry mouths.
Ingredients
Olive oil
1x Chopped onion
2x Chopped garlic cloves
1x tsp Ginger
2x tsp Curry Powder
1kg Pumpkin (peeled, deseeded and chopped)
175g Red lentils
1x Vegetable stock cube
90g Low fat yoghurt
Fresh coriander
1.25l Water
Method
Saute the onion until soft. Add the garlic and the curry powder and cook for 1 minute.
Add the Pumpkin, lentils, water and the stock cube.
Simmer for 15-20 minutes until the lentils and pumpkin is soft.
Set aside to cool, then blend. Reheat and serve with yoghurt and coriander.
